Breakfast is an important meal of the day, but the morning rush sometimes forces it to be overlooked. In an effort to keep my breakfast healthy, while still eating quickly, I have found a few go-to meals that I tend to prepare during breakfast time.
Egg Mug-Muffin. I use egg substitute, pour about 3 T into a mug, and microwave for 30 seconds. It also works to use a regular egg, if it is beaten well before microwaving. After heated, the egg can be put onto a toasted English muffin with a piece of ham, light cheese, or many other combinations! A detailed recipe for this meal will be coming soon!
Oatmeal. Using plain steel-cut oats, just add water and microwave for this quick and healthy breakfast! Variations can satisfy different cravings by adding a handful of fruit or berries, almonds, or some cinnamon. Sometimes I add some almond milk for a little extra creaminess as well!
Cereal. I know, this seems like not the healthiest option, BUT it can be if you choose the right cereals! I like shredded wheat (not frosted) and cheerios as my main choices, but there are also bran flakes and other non-sugary cereals that can be good as well. Usually when buying cereal I like to check out the ingredients and make sure they use whole grains, and I also prefer to keep the ingredients to a minimum. Adding a handful of berries can help round out this meal as well!
Greek Yogurt. I usually go for the plain, fat free Greek yogurt so that it is easy to use in recipes or a variety of meals. For breakfast, I have found that spreading Greek yogurt on a whole wheat bagel compares in taste to a bagel and cream cheese, but a bit healthier! Also, on toast, Greek yogurt can be spread and then adding a sprinkle of cinnamon is a nice sweet treat in the morning that is pretty quick! Finally, Greek yogurt can be eaten as it is, with some cut up bananas, grapes, or berries. Adding cinnamon can be good too, or bits of granola.
Fruit. I am pretty hungry in the mornings so fruit would not work for me as an entire breakfast... But I almost always have fruit with my breakfast! Bananas are great on toast, with cinnamon or peanut butter or even in cereals/oatmeal for example.
