Banana Pancakes
Based on a recipe from another site called Running With Spoons.
Instructions:
Combine all ingredients in a bowl. Add enough milk to get pancake batter consistency (usually about 1/4 cup). Mix well with a fork, mashing the banana thoroughly. You can also choose to blend the mixture which gives a nice consistency but I like to avoid the clean up!
Pour mix onto heated skillet on stove top. Spread the batter pretty thinly to make sure it cooks through.
Flip the pancake when bubbles/holes begin to appear in the pancake. They cook pretty quickly!
Continue flipping until both sides are a deep brown color.
Makes 2 pancakes
Variations:
Blueberry - after pouring the batter onto the skillet, add a few blueberries in each pancake!
Cinnamon - Before mixing the batter, also add cinnamon to taste and vanilla flavoring (about 1 tsp or to taste).
Chocolate chips - After pouring the batter onto the skillet, add chocolate chip morsels sparsely through the pancake. Also can crush a dark chocolate candy bar to keep things a little healthier if you would like!
Greek yogurt - For a little smoother pancake and some extra protein, add a scoop (1/4 cup or less) of Greek Yogurt to the mixture before pouring onto skillet.
