Greek Veggie Pizza.
Ingredients:
One pre-made 12 inch pizza crust 1/2 cup vegetable pasta sauce 2 spoons Greek yogurt (the taste is strong to don't overdo it!) 1 cup chopped, boiled eggplant 1/4 cup kalamata olives, cut in half 4 sliced sundried tomatoes 1/4 cup pine nuts 1/3 cup feta cheese (I used a tomato basil kind, but any works) |
Directions:
Preheat the oven and prepare as directed on the crust packaging.
Combine the tomato sauce with the yogurt. Mix and then spread over the crust.
Sprinkle the eggplant over the pizza, followed by the olives and sundried tomatoes.
Toast the pine nuts and then sprinkle them next. Finally spread the cheese over top.
Bake as instructed on the crust package.
