Sesame Chicken Stir Fry.
Directions:
Cook rice as directed on package.
Heat 1 tsp oil in a skillet, add carrots and broccoli. Heat while stirring until softened. Add green onions, pineapple, 1 T soy sauce, and garlic salt to taste. Mix well and allow to simmer for 5 to 10 minutes.
Heat the other tsp oil in a skillet, add chicken and other tablespoon soy sauce. Sprinkle chicken with garlic salt and pepper. Allow chicken to cook through, flipping half way.
Once the chicken is cooked, cut into strips and sprinkle with sesame seeds if desired.
Serve with rice bed under vegetables and topped with chicken.
**Another option is to add crushed red pepper flakes instead of sesame seeds for a bit of a spicier stir fry.
**Any vegetables may be substituted or added for this dish, sometimes I use frozen mixed vegetables for a quicker option and they work great.
**Also delicious when served with a sweet and sour dipping sauce!
