Soy Mango Grilled Salmon
Directions
1. Slice the mango into 1/4 inch strips. If possible, I like to do this over the bowl that I will be preparing the rest of the sauce in so that I am sure to get all the juice into the flavoring! To cut the mango, I cut on either side of the seed, and then make the strips with the shell still on, and then use a spoon to scoop the strips away from the coat and into the bowl.
2. Chop the pepper into large chunks and add to the bowl with the mango.
3. Add soy sauce, vinegar, oil, and seasonings to the boil and combine all ingredients well.
4. Spray four pieces of foil with cooking spray and then set one fillet on the center of each piece of foil. Pour 1/4 of the mango soy mixture over each fillet. Use hands to coat the salmon with the seasonings and sauces.
5. Fold the foil into pouches so that the juices cannot escape. Grill at about 400 degrees for 10-15 minutes on each side (depending on the size of the fillet).
6. Serve over a bed of spinach and enjoy!
