Spicy Jerk Chicken Finger (sandwich)
Preheat the oven to 400 degrees.
Cut the chicken tenders into strips, about 3'' by 1''.
Combine the egg (beaten) and hot sauce in a Ziploc bag. Mix well, then add the chicken and coat the chicken in the liquid mixture.
Crush the cheerios by putting them in a bag and rolling over them with a rolling pin. It is also an option to crush by hand, this is what I did, and it leaves some larger chunks that turn out crisp and crunchy! Then put the crushed cheerios in a bowl with the cayenne, paprika, and oregano, mix together.
Take each piece of chicken from the bag and dip in the seasoning mixture, coating both sides. Place the chicken strips onto a greased 9X13 pan.
Bake chicken 10-12 minutes or until no pink remains when cutting it open.
Next, prepare a dipping sauce (sandwich spread) by combining the yogurt, a small dash each of vinegar and lemon juice, and a sprinkle of garlic salt. Spread over the top bun if preparing as a sandwich.
Assemble sandwich by layering chicken fingers, lettuce, tomatoes, pickles, and the top bun with spread. Enjoy!
