White Macaroni and Cheese.
Directions:
Boil water and add pasta noodles, cook as instructed (tend towards the shortest end of the cook time).
Chop the squash (both) into quarter discs. Add squash and onion into the boiling pasta with about 5 minutes remaining on the cook time.
Drain pasta mixture when done cooking and return to pot, add the mushrooms.
Combine the yogurt, cottage cheese, garlic salt, and pepper in a bowl. Pour the cheese mixture over the pasta and stir until cottage cheese becomes melty and stringy. Serve in bowls and top with a sprinkle of parmesan.

This dish can easily serve 4-8 people. With added meat (see below) it may even serve more!
**optional to also add ground turkey, chunks of ham, or even some diced chicken breast to this meal if you are looking for some extra protein. Also feel free to mix up the veggies - broccoli, tomatoes, etc could all work well!
