Mango Tilapia Tacos.
Ingredients:
8 corn tortillas (8'') 2 tilapia fillets (4 oz) 1/2 package of taco seasoning cheddar cheese (amount varies) 1/4 cup 0% Greek Yogurt 2 lettuce leaves Mango salsa (recipe separate) |
Directions:
Rub taco seasoning onto tilapia fillets and put in a Ziploc bag to soak in the flavor for about 30 minutes (can do this for as long as desired, or not at all). Cook fillets in greased skillet as directed on package, usually about 5 minutes each side.
Grease and heat a skillet. Place tortillas one at a time on the skillet, pressing them down with a spatula for about 10 seconds each side (should turn a little golden in places). Set heated tortillas aside and cover with moist paper towel to keep warm.
Cut the tilapia into small chunks.
Prepare the taco by adding 1/8 of the tilapia, sprinkle cheddar cheese, one small scoop yogurt, and a piece of lettuce. Top with mango salsa and serve.
