Light Black Bean Enchilada.
Directions:
Preheat oven to 350 degrees.
Stir together the yogurt and salsa in a bowl and set aside. Mix the black beans and taco seasoning in a separate bowl and set aside as well.
In a baking pan (I used a pan for baking bread - about 9x5) layer half of the tortillas, then spread half of the salsa mixture, followed by half of the black beans. Repeat the layers and top with cheese. Drizzle hot sauce over the top if desired.
Cover with foil and bake for 20 minutes. Remove foil and turn oven to broil to cook for another 5 minutes. Let cool and serve!
This makes 2-3 servings and is best served with fresh lettuce, tomatoes, olives, avocado, etc. on the side!
