Egg Mug-Muffins.
Classic ham-egg-cheese Mug-Muffin.
Ingredients:
3 T egg substitute (or one beaten egg) 1 whole wheat English muffin 1 slice ham small pinch cheddar cheese hot sauce (optional) |
Directions:
Pour the egg substitute (or one beaten egg) into a coffee mug, microwave for 30 seconds. After heating, use a spoon to lift the egg and make sure there is no liquid still on the bottom. Heat more if needed. Toast the English muffin.
Microwave the slice of ham for 10 seconds. Stack ham, egg, cheese, hot sauce (if desired).
Enjoy!

Pour the egg substitute (or one beaten egg) into a coffee mug and mix in salsa, microwave for 30 seconds. After heating, use a spoon to lift the egg and make sure there is no liquid still on the bottom. Heat more if needed. Toast the English muffin.
Spread the avocado on one slice of the muffin. Stack the egg, cheese (if desired), tomato slices, and hot sauce (if desired).

There are pretty much endless possibilities with this so here are some general guidelines on making more variations!
Veggies can be a great addition, especially chopped peppers, onions, mushrooms, which can be added to the egg before microwaving and heated together.
Greek Yogurt can make a good spread on these sandwiches as well. I often replace cheese with a spread of yogurt, and it also works with hot sauce and/or tomatoes.
Cottage cheese can be added to the egg before microwaving for a creamy addition as well.
Ham, sausage, turkey, black beans and other meats can be added to these sandwiches nicely.
Finally, the muffins can be replaced with whole wheat bagels (I like to use mini bagels - they are the perfect size for the egg!), or a whole wheat tortilla!
